Where and when do Italian kitchens hire?
Italian tourism runs on two main seasons. Summer, from May to September, fills the coasts and lakes, while winter, from December to April, bringsthe Alpine ski resorts to life. Half-board hotels recruit whole kitchen brigades for four to six months.
Roles range from kitchen assistant and commis to chef de partie, sous-chef and head chef. Pizzerias look for pizza makers, and large hotelsemploy pastry cooks, kitchen porters and cooks dedicated to breakfast service and buffets.
Destinations with the most vacancies
- Romagna Riviera (Rimini, Riccione, Cesenatico): family hotels from May to September.
- Lake Garda and the Lombard lakes: a long season from April to October.
- Sardinia, Apulia, Sicily and the Amalfi Coast: summer resorts and restaurants.
- Dolomites (Val Gardena, Alta Badia, Cortina d’Ampezzo): winter and summer seasons.
- Aosta Valley and Alpine Lombardy (Cervinia, Livigno, Bormio): ski resorts.
The hiring calendar
Summer hotels recruit between January and April, winter resorts between August and October. Properties that keep the same team every year filltheir rotas early, so applying three to four months before opening day noticeably improves your chances.
Skills and paperwork employers expect
Employers want brigade experience, solid Italian cooking basics and an HACCP food-hygiene certificate, which is compulsory for anyone handlingfood. Kitchen Italian is learnt quickly on the job, while German is a clear advantage in South Tyrol.
Who can cook for a season in Italy?
EU, EEA and Swiss citizens can sign a contract directly. They need a codice fiscale, a valid ID and, after three months, registration with thetown hall where they live. No work permit or recognition of qualifications is required.
Tourism quotas under the Decreto Flussi
Non-EU cooks, including British, American and Australian nationals, are hired through the Decreto Flussi: in 2026, 88,000 seasonal places are sharedbetween farming and tourism. Hotels file the C-stag turistico form on the ALI portal on the 9 February click day.
Once the nulla osta is issued, usually within about twenty days, the cook gets a visa at the Italian consulate. The residence contract is signedwithin eight days of arrival, followed by the application for a seasonal residence permit.
Length of stay and returning seasons
A seasonal permit covers up to nine months in any twelve. A cook who returns every summer can obtain a multi-year authorisation and prioritywithin the quotas, provided the conditions of the previous stay in Italy were respected.
Watch out for fake recruiters
Some adverts promise a contract and visa in return for fees. In Italy the nulla osta request is filed by the employer, and the public procedure neverinvolves the worker paying a middleman for a job offer or a quota.
Pay and working conditions in hotel kitchens
Italy has no statutory minimum wage. Hotel cooks fall under the national tourism agreement, restaurant and bar cooks under the public establishmentsagreement; pay scales depend on the grade, and seasonal staff receive a pro-rata share of the 13th and 14th month salaries.
Hours and days off
The standard week is 40 hours, often split between lunch and dinner service. Overtime must be paid at a premium and weekly rest is guaranteed, even though peak season tends to concentrate work into long days during July and August.
Board, lodging and season budget
In resorts and on the coast, many hotels offer staff rooms and meals, known as vitto e alloggio. The table below helps compare offersand prepare the necessary documents before travelling to Italy for the season.

How do you land a seasonal cook contract?
A targeted application sent early, with photos of dishes and references, makes the difference. The steps below apply to EU candidates; for everyoneelse, the employer must also start the Decreto Flussi procedure in time for the click day.
- Choose summer or winter depending on your experience.
- Prepare a CV in Italian or English listing roles, brigades and specialities.
- Take an HACCP course if you lack the certificate.
- Apply to hotels, public job centres and through EURES.

Common mistakes made by seasonal cooks
Most disappointments come from conditions misunderstood at the start. Clarify the real pay, the number of days off and the type ofaccommodation in writing before accepting, because problems are hard to fix in the middle of the season.
- Accepting a job without the grade written into the contract.
- Confusing gross and net pay, or monthly salary and a season lump sum.
- Working unpaid trial days without being declared.
- Paying fees for a promised visa or contract.
- Forgetting the HACCP certificate checked during health inspections.
Can a beginner commis find a season in Italy?
Yes, especially in large hotels on the Romagna Riviera and the lakes, which train commis cooks for buffets and breakfast service. Cateringschool or experience in fast food is still an advantage at interview and helps justify a higher grade.
Is accommodation really free?
Often, but not always. Some hotels deduct a contribution from wages, others provide room and meals as a benefit in kind. Make sure the arrangementappears in the contract or in a signed offer letter before you leave home.
Do I need my cooking diploma recognised?
No. Cooking is not a regulated profession in Italy, so no diploma recognition is needed. Employers judge experience and skills, but the HACCPfood-hygiene certificate must be obtained according to the rules of the region where you work.
Can I claim unemployment benefit after the season?
Seasonal tourism workers can apply for NASpI, the INPS unemployment allowance, if they meet the contribution requirements. EU citizens can alsouse these periods in their home country thanks to the coordination of social security systems.
Which season is best for a first experience?
Summer offers more vacancies and a steadier pace in family-run hotels. Winter in the Dolomites or Livigno attracts experienced, oftenGerman-speaking cooks, with international guests who expect more refined menus and longer opening hours.
