What does a seasonal cook do in Sweden?

A seasonal cook prepares food for a restaurant, hotel or resort kitchen during peak periods. Depending on experience, the job covers a hot or cold station, breakfast buffets, order flow and strict hygiene and traceability rules that Swedish food inspectors check regularly.

Seasonal kitchens range from après-ski bistros to fine-dining inns in the archipelago, as well as staff canteens and festival food trucks. The most common roles are commis, line cook, buffet cook and sous-chef, with head chef positions usually filled by returning staff.

Where and when to cook for a season

In summer, demand centres on Gotland, the Bohuslän coast, Båstad, the Stockholm archipelago and the big cities. In winter, restaurants in Åre, Sälen, Vemdalen, Idre and Riksgränsen run at full capacity from December to April, peaking during the February school holidays.

Skills employers expect

Culinary training or several seasons of experience are usually required for a qualified cook position, while commis roles can suit beginners. Solid knowledge of allergens, which Swedish guests take very seriously, and the stamina to handle busy services make a real difference.

EU citizens: direct hiring

Citizens of the EU, EEA and Switzerland can sign a contract directly. The employer requests a coordination number from Skatteverket for payroll. For stays of a year or more, you must register your move and will normally receive a personnummer.

Non-EU cooks: seasonal permit or ordinary work permit

The seasonal work permit explicitly covers hotels and restaurants as well as ski resorts. Since 1 June 2026 it can be granted for nine months in any twelve-month period. Pay must reach at least the full-time collective-agreement minimum, even for part-time work.

For non-seasonal jobs, the ordinary work permit has required at least SEK 34,470 a month since 16 June 2026, which is 90% of the median salary. Cooks are not among the occupations exempted from this threshold.

How much does a seasonal cook earn?

Sweden has no statutory minimum wage. In hotels and restaurants, the Gröna riksavtalet agreement between Visita and the HRF union sets pay floors. From 1 April 2025 to 31 March 2026, pay group 1, qualified work, started at SEK 27,279 per month.

That equals SEK 157.68 per hour. Pay group 2, for work learnt on the job, was SEK 25,856 per month. New rates apply from April 2026, so ask the employer or the union for the current scale before signing your contract.

Hours and working conditions

Rotas follow service times: split shifts between lunch and dinner, long weekend days and busy school holidays. Normal working time averages 40 hours a week. Meals are often provided during shifts, sometimes with a small deduction or a taxable benefit on the payslip.

Accommodation in resorts and on islands

In Åre, Sälen or Visby, finding your own place in high season is very expensive. Most employers offer staff rooms, often shared. Get the rent, any deduction, utilities and move-out date confirmed in a written document before you travel.

Landing a kitchen job step by step

  1. Prepare a one-page CV in English listing training, past kitchens and verifiable references.
  2. Search for “kock” on Platsbanken and filter by tourist municipalities such as Åre, Malung-Sälen or Gotland.
  3. Check EURES and apply directly to mountain hotels and Gotland restaurants.
  4. Target summer jobs from February and winter jobs from August, when teams are formed.
  5. Confirm the pay group, agreement, typical rota and accommodation before signing.
  6. Outside the EU, let the employer start the seasonal permit application, then complete your part.
  7. Arrive a few days before opening for training, tax registration and a bank account.

Pitfalls to avoid

Questions cooks often ask

The answers below summarise what foreign cooks most often ask when planning a season in Sweden. They reflect the 2026 rules and should be confirmed with the employer or the authorities before departure.

Do I need a qualification recognised in Sweden?

Cooking is not a regulated profession in Sweden, so no diploma is legally required. Employers assess your experience and references instead. A culinary qualification does, however, make it easier to claim pay group 1 under the collective agreement.

Can I work in English in a Swedish kitchen?

Yes, English is enough in many resort and international hotel kitchens. Recipes and allergen labels are often in Swedish, though. Learning basic vocabulary for ingredients and allergens speeds up your integration and reduces mistakes during service.

Are meals included during shifts?

Often, but they may be subject to a small deduction or treated as a taxable benefit. Ask how meals appear on the payslip, especially if you will work six days a week during the high season.

When should I apply for winter in Åre or Sälen?

Recruitment often starts in late summer, between August and October, for a December opening. Applications sent in November can still succeed, but the choice of positions and staff housing is much narrower by then.
